I've tried french presses, vacuum systems, etc.; Chemex 8 Cup Coffee Maker CM 8A tops them all. And it's not even the coffee maker that is the key but the filter paper. Since the Chemex system was invented by a scientist, back in the '30's, I can only assume he was using some laboratory filter paper in his shop and figured out that was what was making his coffee taste so good. As far as I can tell, Chemex filter paper removes the slightly sour/acid taste from coffee, that I find objectionable. This, in turn, lets through the complex bitter/sweet flavors and allows me to taste them more fully. For what it's worth, I grind my dark roasted beans right before using them, grinding 6 cups worth for wife and myself. | There's a Reason it's So Good Nearly everything we eat and drink has some undesirable parts to it: stems, seeds, pits, fuzz, hair, skin, rind, fat, bone; need I go on? Coffee also has substances that simply taste bad. We normally think about just keeping the solids out of our cup. There are many more things that can ruin the product of good beans properly roasted and clean water at the right temperature. I don't claim to know what they all are, but one for certain is oils. Chemex filters capture the oils that can spoil the taste and spoil the coffee itself. I know you purists will scoff, but I love coffee. Sometimes I don't finish my cup of commute coffee and leave the cup on the dash. If I've parked in the sun, I can come out after work to a couple swallows of hot coffee that still tastes fresh...the oils that go rancid are missing from Chemex coffee. It also holds very well in a vacuum carafe. My son-in-law has some very expensive coffee machine. He was marveling at how great the Chemex... |

For the last few years the families been spending nearly $10/month on filters, and saw this pop up significantly less then any other reusable filters so I got a little excited. Wife's pretty particular about her coffee, so I didn't tell her I was using a reusable filter to avoid prejudice in the taste test....as the story goes.... Went about my standard AM routine, pouring water over a fine grind, and wasn't disappointed with the results. I was mildly nervous about grinds getting in the coffee, but the filter worked as it should. No complaints from the wife either. I'll this one as a victory. |
